Ingredients

  • 2 tsp vegetable oil
  • 8 large baking potato
  • 300ml pot soured cream

Method

  1. Heat oven to 220C/200C fan/gas 7. Rub a little oil over each potato and put on the top shelf of the oven. Bake for 20 mins, then turn down the oven to 190C/170C fan/ gas 5 and bake for 45 mins-1 hr more until the skin is crisp and the flesh soft. Remove from the oven. Make a cross in the centre of each potato, dollop over the soured cream and serve.

Baked these potatoes for a bonfire party. Followed the method exactly and was told by various guests that these were the best jacket potatoes they had ever had. Delious!

It's much faster if you microwave the spud first and then rub it with oil - you only need 20 mins in the oven then :) I love mine with cottage cheese and coleslaw

Does anyone have a general guide on how long it takes to bake the potato? Is it always 1 hour? How much longer does it take for larger potatoes?

Secret to crispy-skinned baked potatoes! After baking for 1.5 hrs at 220°C or 200° fan, remove from oven and IMMEDIATELY cut open with sharp knife. This allows the steam to escape and keeps the skin crisp.j
