Method

  1. Boil a pan of water, then add the rice. Cook for 8-10 mins until cooked but still firm.

  2. Meanwhile, heat the oil in a pan. Fry the bacon pieces until crisp and tip onto a plate. Add the onion and garlic and fry until soft. Drain the rice then add to the pan with the crispy bacon, butter, frozen peas and chicken. Heat through, stirring all the time until piping hot. Stir in the chopped tomatoes, soy sauce and seasoning, if it needs it, to finish.

This was delicious; my 7 year old ate it all up which is always a bonus. I made half and this happily fed 3. I added a bit more bacon but a great way to use up leftover brown meat from a chicken (I've got very bored of pie or curry)

Very nice. I didn't use oil to fry the bacon - just let the fat render (much lighter and healthier). Next time will add some snipped herbs and a bit of chilli powder.

This is an old favourite of mine, too. Never tried fish sauce though, sounds like a great idea. I find peas fry up nicer straight from frozen than boiling them separately!

I call this type of dish a "Gerry's Bitza" or a "Cambridge Special"
It is different every time but always goes down well.

Hi, I too have been making this for years, but usually add some raisins or dried apricot chopped small, also always add a handful of peanuts, adds a nice crunch....

Consider replacing the butter with a small amount of fish sauce (as someone else mentioned) to give it a more Asian flavour.

Really yummy! A real staple because it can be just thrown together at the last minute!! It is also nice with a tablespoon of Thai fish sauce too!
