  • 2 tsp cornflour
  • 2 tsp water

  1. Heat the olive oil in a large pan and fry the onion, garlic, diced carrot and celery stick for 6-8 minutes. Stir in the minced lamb and cook for 3-4 minutes until browned, then add the sun-dried tomato paste and Worcestershire sauce. Stir in the beef stock and cover and simmer for 35-40 minutes until very tender. Season well. Mix the cornflour with cold water to a paste, stir in and cook for 1 minute. Serve over baked potatoes and top with grated cheddar.

Really tasty recipe. I made this with lamb mince and left out the celery. Halved the quantities as was cooking for one. But ended up eating it all so ate for two! Will definitely make again.

Tasty and so easy. I used beef instead of lamb and it was hearty at the time and I went to bed feeling full but was hungry in the morning so didn't feel like I'd had a massive dinner the night before.

Use beef mince instead of lamb, spoon onto a slice of toast and top with a fried or poached egg. My partner pulled his nose up the first time I served this but absolutely loved it

Why not make an enormous batch, divide into small portions and freeze for use with baked potato, pasta, cottage pie etc, etc. An Anthony Worral Thomson standby mince, in fact!

this is just perfect for a cold night. it was really filling and the cheese melted on top was lovely. the kids loved it and my partner wants me to use the mince as a bolognese as he loved it.

This was a real hit with me and my partner. We were getting a bit fed up with the same meals for tea, so tried some new recipes. Very easy to make and really yummy!!

Why the cheese, when you already have your protein in the mince? The carbs is obviously the potato, so we need more veg in there.
I'd go with either peas and sweetcorn, or maybe cook some broccoli then cu it down into really wee florets. Or even do a twist to Bubble and Squeak, and get some ligthly cooked cabbage (or spinach or kale) into the potato, then the mince over the top.

That way, you can have your cheese at one of your other meals - giving variety, dairy requirements, veg portions towards 5-a-day, and whatever else I've forgotten.
