Ingredients

  • 300ml double cream
  • 175g caster sugar
  • 1 very ripe charentais melon, peeled, deseeded and chopped into small chunks

Method

  1. Tip the cream and sugar into a pan. Bring to the boil, stir until the sugar has dissolved, then turn off the heat. Tip the melon into a food processor with the lemon juice, blitz until smooth, then pour the cream onto the melon and blitz again.

  2. Pour the mix into an ice-cream machine and churn until thick and semi-frozen, then transfer to a freezerproof container and freeze. Serve the ice cream scooped into a bowl with fresh raspberries.

I am making this for the first time and using ingredients as instructed. It seems to have a lot of sugar in it, has anyone tried making it with less sugar? Thanks

Made using Elmlea instead of cream in my old manual ice cream maker. Delicious flavour, will make again.

Tried it and loved it!
I didn't use and ice cream machine, though, I took it out of the freezer ever 2 hours and mixed it really well with an electric mixer.
Worked like a charm :))

Found this very easy to make and after a really good churn in my ice cream maker, it was fairly creamy. The melon makes it lovely and refreshing too.

Before I had my ice cream maker, I would whisk it up in my food processer before putting it the freezer and whisk it by hand or in the food processer every couple of hours to avoid it being completely like a sorbet.

Really good recipe. I agree it is a little like a sorbet but still creamy too. I agree it takes less than the 30 minutes prep time too. If you're not into ice-cream that is too custardy, this is for you.

This was my first attempt at using my new ice-cream maker and it was not as creamy as I would have liked, half sorbet/half ice-cream. Great flavour though!

This is a fantastic recipe - I've already made it four times; three times with a Gala melon (couldn't find Cantaloupe) and once with a Watermelon! I don't have an icecream maker, so do the stirring by hand.

It is so easy to do - I would even debate the 30 minutes preparation (depends on how long it takes you to carve out a melon - I can do it in under 10 mins) - I have it in the freezer in 20 mins or so.

It tastes about half way between a sorbet and an icecream - a definite winner!
