  • 100g couscous

  • 200ml hot low salt vegetable stock (from a cube is fine)
  • 2 spring onion

  • 1 red pepper
  • ½ cucumber
  • 50g feta cheese, cubed
  • 2 tbsp pesto



    Pesto is a generic Italian name for any sauce made by pounding ingredients together.


  • 2 tbsp toasted pine nut


  1. Tip couscous into a large bowl, pour over stock. Cover, then leave for 10 mins, until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper and dice the cucumber. Add these to the couscous, fork through pesto, crumble in feta, then sprinkle over pine nuts to serve.

I used grilled red pepper, as well as matured goat cheese instead of feta. I also made fresh pesto in wet&dry grinder, adding extra olive oil so to make it work better as a dressing

Very quick and easy. Took it camping with me for a BBQ and went great with chicken shish kebabs. Everyone enjoyed and the bowl was completely clean afterwards

I tried it with pasta instead of couscous - works great as well if you don't have couscous at hand :)

I love this recipie, I add sliced green olives to mine and don't put any onion in and dice the cucumber and pepper instead of sliced. Great for BBQ season.

I'm not a fan of feta so used chedder instead. I also used red pesto instead of green, it was never the less, absolutely delicious!

This is lovely; you can vary to ingredients to suit your own taste. My 3 year old grand-daughter would eat it every day if she could!

I had this with my tea and it was deliciouse, I used more feta, cherry tomatoes and sprinkled in some mint and tobasco, which I think lifted the dish and was so tasty(I only put 5 stars because there is always room to improve!!!)

Really great! I improvised and used other seeds instead of pine nuts and baked paprika I had leftover, but this is great for a healthy dinner or picnic

I couldn't believe how delicious this salad was when I first made it! It takes almost no effort at all and the result is fantastic. I made it for a birthday party and it went down so well.

this recipe is absolutely fantastic!! makes a nice fluffy coucous which isn't dry! I added some diced chicken seasoned with salt pepper chili-powder and basil which I put in the wok together with the diced pepper. I also added some semi-sundried tomatoes, juice of half a lemon and i used a provincial herbes veg. stock tablet. Delicious!!!
