Method

  1. Put the onion in a bowl, drizzle over the vinegar, then season with salt and pepper. Set aside for 10 mins or so until the onion has softened slightly.

  2. Meanwhile, in another large bowl, mix the parsley and tomatoes with the capers. When ready to serve, tip the lentils into a sieve and rinse with boiling water from the kettle. Drain. Toss the onions and their juices into the lentils, then add the 2 tbsp olive oil and carefully mix everything together. Scoop this onto a large serving platter, then top with the ham, chicken and rocket. Drizzle with more olive oil and a little more vinegar, if you like, then serve.

Lovely! I missed out capers and added extra lettuce leaves, cucumber and sprouted lentil / pea shoot thingies. Cooked the chicken breasts in seasoned flour and oil and butter to stop them drying out and it realy worked! http://www.thekitchn.com/how-to-cook-moist-tender-chicken-breasts-every-...
Felt v healthy but was definitely tasty. Will use again over the summer months I'm sure.

Very delicious recipe. I was looking for healthy dinner ideas and came across this. My boyfriend loved it, too.

The second time I made this, I heated the lentils in red wine, and served the salad with some tomato chutney. It went well with the earthy flavour of the lentils, and gave sweetness to the chicken.

The sherry vinegar with the red onions works so well with the saltiness of the ham. We have this salad all through the summer. I always use rotisserie chicken from the supermarket and shred it up - fantastic and impressive summer dish.

Love the clever idea of warming the lentils using boiling water from the kettle. I made this dish for supper last night and instead of tomatoes, I added some chunked cucumber and used parma ham instead of serrano as that is all I could get in the supermarket. Would definitely do again as a lovely substantial supper salad.

We just loved this salad! It is perfect to serve on a hot summer day when one does not feel like cooking. I used prosciutto instead of serrano ham since the latter is very expensive where I live, and roasted some boneless chicken breasts, which I then sliced thinly. This will be part of our regular hot weather meal rotation.

Very easy to make, this is the first time I've tried the lentils and they went so well in this salad, lots of texture & flavour.

Very easy, simple and so much flavour! I didn't have any lentils so we had some multigrain bread instead, which worked fine! I've since adapted this recipe into other salads and all have tasted amazing! Lovely summer dish!
