  • 1 onion, chopped
  • 1 tbsp olive oil
  • 1-2 tbsp Thai red curry paste
  • 300g red lentils
  • 1.7l vegetable stock
  • 200ml coconut milk
  • chopped spring onions, to serve (optional)

Method

  1. Fry the onion in 1 tbsp olive oil until soft. Stir in the red Thai curry paste, depending how hot you want it.
  2. Add red lentils and mix to coat in the paste. Pour over vegetable stock and simmer for 20 mins until the lentils are tender.
  3. Blend with coconut milk and reheat if needed. Serve scattered with chopped spring onions, if you like.

Nice dish, but as I like a creamier texture for my soups I used 1.5L of stock and still found it too runny for my liking. I will try again with 1L of stock, or even less. (I did use washed, split lentils though so this might make a difference if you're using whole; I'm not sure).

Just made this for lunch - very scrummy! Will be a regular now I think. I also added a squeeze of lime juice as I had the end of a lime to use up - gave it a nice citrusy tang which worked well.

Very tasty soup and simple to make! I added a bit of lime juice to make it a bit zingy and more lentils so it was a bit thicker. Also used green thai paste as it was all i had!

Really easy to make and really tasty. I add a little extra red curry paste to make it even spicier. Great for lunches at work, with chappati croutons.

Love, love, love this soup!!! I must admit though that I prefer a thicker consistency, so last time I made it I put in just under 1.5l stock instead of the amount suggested on the recipe. Mmm...

Just made this soup... didn't have enough red lentils so topped up with green ones, put in 2 tablespoons of green paste,whizzed when cooked by hand held blitzer...felt the soup is a bit thin for our liking.. and very "beige", next time I'll not use so much stock, say, 1.3litres...tasty tho' will defo make it again.

Hello - this sounds great and I'm trying to save it to my newly created good food binder. I'm a technophobe so no doubt I'm missing something but can't see a way to get it into the binder - can anyone help?

This soup is lovely. Really easy to make and really filling. I like it with broken up chapati's as croutons.

Tried this once. It was fine. I think I will add a bit of lemon grass next time and a squeeze of lime to enrich the flavour.
Still, love it for healthy option :)

This was really lovely, I added a tiny bit of salt to bring it all together. I also let it cool then reheated it and it got slightly thicker which I personally liked.

This was delicious. Easy to make as well. Used Green paste as that is what I had and also didnt bother blending (too lazy!) It was great. Could it be frozen, before the cocnut cream is added? It would be good to make a big batch.

Lovely! Perfect winter soup. I used green Thai paste as had no red paste, added canned butter beans for the last five mins, and didn't blend as don't have a blender.

Tasted absolutely scrumptious. Wish I had some naan bread with it as that would have perfected the meal!

Quite possibly my favourite soup I've ever made. I used Thai green curry paste instead of red and it was amazing.

I really loved this recipe. It was very simple and tasty - even my other half (who says he really dislikes lentils) thought it was tasty. I think the little scattering of tangy spring onions on top is a great extra too - works really well with the soups warm and rich flavour. And I'll definitely be making it again.
