  • 1kg lean minced beef
  • 100g white breadcrumbs
  • 3 spring onions, trimmed and finely chopped

  • 2 tsp ground cumin
  • ½ tsp Tabasco sauce, optional
  • handful coriander leaves, finely chopped
  • 12 cherry tomatoes, halved
  • 6-8 tbsp chilli sauce (we used Linghams), optional
  • vegetable oil, for greasing


  1. Mix together beef, breadcrumbs, spring onions, garlic, eggs, cumin, Tabasco, coriander and some seasoning until combined. Be careful not to over-mix or the meatloaves will be tough.

  2. Divide the mixture into 8. Use your hands to shape each one into a small oval, like a mini meatloaf. Arrange 3 cherry tomatoes on top of each, then drizzle over the chilli sauce, if using. Cook or freeze in airtight plastic containers.

  3. To cook, heat oven to 200C/180C fan/gas 6. Place the meatloaves on a lightly greased, shallow baking tray and bake for 25-30 mins until the meat is cooked through.

  4. To cook from frozen, heat oven to 180C/160C fan/gas 4. Place the meatloaves on a baking tray and loosely cover with foil. Cook for 30 mins, then remove the foil increase the temperature to 220C/200C fan/gas 7 and cook for a further 25 mins.

Brilliant recipe! Lovely flavours and the chilli sauce and tomatoes add a nice relish to them, adds to the flavour and keeps them juicy. Definitely making them again! :)

I made this the other night for dinner and it was delicious! I had some leftover lamb mince and used that instead, and it went really well with the spices! I only used 200g mince and the same amount of spices as stated, with a big dash of Tabasco sauce.
I served it on a bed of mashed potatoes, and you can find the result on my blog here:
I focus on mainly making healthy and hearty food, so good! :D I had to use a muffin tin for these as I didn't have small loaf tins, just means you get more of it!

I halved the quantities but still made 5 good size patties. They were rather bland but this may have been because I omitted the garlic and chilli sauce: my son still wasn't keen on them anyway.

Made these in the week and they were great! Served them with corn on the cob. Yum!
They are quite spicy - especially from the drizzle of chilli sauce over the top. I halved the recipe and everything worked perfectly still.

Yum, these were really great. I served with wedges, lime green beans and creme fraiche. My kids helped me make them and they were really easy. I made them in a muffin tin and got 6 out half the quantities of this recipe, wasn't enough as everyone wanted seconds!

Basically spicy burgers, although they were very nice spicy burgers. I halved the recipe and still came out with five good-sized patties.
I also topped up my beef mince with a little quorn, which burned a bit but tasted fine!
