Make a classic coronation chicken filling to serve with jacket potatoes or in sandwiches and salads. It's an excellent way to use up leftover chicken after a roast

  • 6 tbsp mayonnaise
  • 2-3 tsp mild curry powder, to taste
  • ½ tsp ground cinnamon

  • 2 tbsp mango chutney
  • 1-3 tbsp sultanas, or to taste
  • 500g shredded cooked chicken

  1. Mix the mayo, curry powder, cinnamon, chutney and sultanas together and season with black pepper. 

  2. Add the shredded chicken and stir to coat in the sauce. Stir in 2 tbsp water to loosen if needed, then season and serve as desired.

Made this and had no mango chutney but followed the advice below and used marmalade. It was delicious!

My mother in law made this for me and it was delicious, usually avoid it but this is really tasty. She used marmalade rather than mango chutney though as we didn't have any.

This recipe is amazing, I've been looking for this for ages!! Tastes just like Coranation chicken from a deli counter! I used korma powder I had in cupboard and followed recipe exactly thank you so much for sharing.

Absolutely delicious, didn't change a thing. Had it in a wrap for lunch, will make again and would be ideal party food too!

Absolutely delicious, so easy to make. Used quantities as rough guideline, forgot to use pepper (didn't miss it), added grated carrots to bulk it up a bit. A winner!

I got hooked on coronation chicken when I was living in Sheffield, and this is my "go to" recipe. It's incredibly tasty, simple, and everyone I've ever made it for loves it. A friend of mine uses this recipe (it's the one I passed along to her) for huge catering events here in Georgia; it is always a huge hit! I think I'm going to the grocery store after work, and make some for supper tonight! ;)

Easy peezy! My husband was most complimentary too!! :-D I added diced dried apricots and a pinch of fresh coriander to mine as I wanted to replicate the coronation chicken that is sold on Waitrose deli counters.

Added some ground cumin by mistake, and used medium curry powder. Didn't have any mango chutney but added mango salad dressing. Tastes nice definetly be making again.
