Serves 4

Versatile and delicious butternut based pasta sauce. Add bacon, chicken or fish for a quick and easy pasta dish. Can't remember where I found this recipie.

  • 750g Butternut Squash
  • 350ml Vegetable Stock
  • 300g Penne Pasta
  • 50g Chedder Cheese
  • 50g Parmesan Cheese
  • 100g Creme Fraiche
  • 200g Spinach (optional)


  1. Cook pasta. Chop butternut into cubes and simmer in the vegetable stock for approx 25 minutes until tender and starting to break down (I used frozen butternut). Mash the butternut and stir in the Creme fraiche and grated cheeses. Finally stir in spinach and add the cooked pasta. You can omit the spinach and add any other store cupboard or meat leftovers.
