Vegan coffee cake simple and easy

  • 150g vegan spread (and some for greasing the tins)
  • 300ml vegan milk (I used soya)
  • 1 tbsp cider vinegar
  • 300g self-rasing flour
  • 200g golden caster sugar
  • 1 tsp bicarbonate of soda
  • 1 esspresso

The Vegan coffee buttercream

  • 200g icing sugar(I recomend more for a good thickness)
  • 100g vegan spread


  1. Heat oven to 200C/180C fan/gas 4. Line the bases of 2 x 20cm sandwich tins with baking paper and grease with a little of the vegan spread.

  2. Put the vegan milk(300ml) and cider vinegar(1 tbsp) into a jug and set aside.

  3. In a bowl put the rest of the ingredients: 300g self-raising flour; 200g golden caster sugar; 1 tsp bicarbonate of soda.

  4. Then pour the milk-vinegar mixture over the other ingredients and mix together and then divide between the tins and put them in the oven for 30 minutes.

  5. The Vegan coffee buttercream mix the ingredients together and add icing sugar until you have a thick mixture that would stay still on the cake or you are happy with it.
