  • 100g short grain/pudding rice
  • 2 pints whole milk
  • 50g sugar
  • Vanilla extract
  • Knob of butter
  • Optional: Nutmeg


  1. Preheat oven to 150 C (fan).

  2. Put rice, sugar, milk and vanilla extract into a large glass oven dish. Sprinkle nutmeg if required.

  3. Add little bits of butter.

  4. Bake for 2 - 2.5 hours.

  5. Leave to stand for 15mins as this will allow the rice to soak up the milk.
