Delicious seafood-free version of the classic paella

  • 400-500g chicken mini fillets
  • 4 tbsp olive oil
  • 1 large onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp ground turmeric
  • 115g chorizo sausage, peeled
  • 225g long grain rice
  • 600ml chicken stock
  • 4 tomatoes, skinned, seeded and chopped
  • 1 red pepper, seeded and sliced
  • 115g frozen peas
  • salt and black pepper


    1. Heat the oil in a large non-stick pan and brown the chicken on both sides. Add the onion and garlic, and stir in the turmeric. Cook for 2 minutes.
    2. Slice the chorizo and add to the pan with the rice and stock. Bring to the boil and season to taste, then cover and continue to cook on a medium heat for 15 minutes.
    3. Add the chopped tomatoes, sliced red pepper and frozen peas, and cook for a further 10 minutes or until the chicken is tender and the rice has absorbed the stock.

Well i made this recipe as instructed (first time trying Paella) and i must say it went down a real treat my dad took 4 servings!! so thanks will use this again most definitely.

Cooked this last week and it tasted fantastic! Just about to make it again like above I put an extra clove of garlic in and it tasted fab, highly recommended.

Oh I almost forgot. Use paella rice and a teaspoon of Spanish smoked paprika!

Almost perfect for a non-seafood Paella. Just add some saffron to the stock and it becomes perfect!

Made this for my husband and I. The recipe even halved makes plenty, although we did polish it off. I added some smoked paprika and a couple of chilli flakes. Really delicious will definately do it again.

I'm new to this site but fancied cooking my boyfriend and I a fancy meal so I tried this. Went shopping and naturally thought I had some ingredients at home which I didn't... So I used vegetable buillion instead of chicken stock (and about 800ml rather than 1L) and when we had finished eating it, I realised that I had forgotton to put the chopped tomatoes in it in the first place. (Also used chorizo from a ring rather than the slices from a packet which was much better). Despite the disasters above (and not to shout about it) - but the paella turned out amazing. It was very juicy and meaty tasting (which i think the toms may have subdued had I added them). So I don't think I'm going to correct it if I do it again and would recommend anyone trying it this way :)

My boyfriend and I both loved this recipe; we added a little paprika as well as the turmeric, that's just personal taste though. We will definitely be making this again!
