Crunchy on the outside and soft in the middle, these cookies are yummy and easy to make!

  • 250g (8oz) plain flour
  • 1 tsp baking powder
  • 125g (4oz) butter, plus extra for greasing
  • 175g (6oz) caster sugar
  • 1 egg, beaten
  • 1 tsp vanilla essence
  • chocolate chips


    1. Lightly butter several baking tray. Sift the flour and baking powder into a bowl. Rub in the butter with your fingertips until the mixture resembles beadcrumbs.
    2. Mix in the sugar and chocolate chips. Add the beaten egg and vanilla essence, and stir to form a smooth dough.
    3. Shape the dough into a long cylinder and cut the cylinder into thin slices and place the biscuits on the baking trays. Bake in a preheated oven at 190oc (375oF, gas 5) for 10-12 minutes until golden.

must the butter be chilled or room temp.
