  • 2 scoops of Madagascan vanilla ice cream
  • 1 or 2 oaty biscuits


  1. Put 2 scoops of ice cream into a bowl

  2. Lightly crumble the biscuits over the top

Mmm definitely one for the binder. I followed the advice on here and added a further third scoop of ice cream, which made it filling as well as delicious. My topping was a bit of a disaster, does anyone have any tips on crumbling the biscuits? I tried using a food processor but to be honest it came out less of a crumble and more of a dust. Saying that it went down a treat with the family, and there's even a bit left over for my lunchbox today.

Being a bit of a connoisseur of ice cream related treats, I was a bit sceptical about this recipe, mainly due to the ingredients. Combining the cream texture of the ice cream with the crunch of biscuit was uncharted territory and I was very wary of stepping into the unknown. I finally bit the bullet and crafted this dessert last week, and boy was it worth it! I notice as well the use of basil leaf for garnish in the picture, but personally I've found that coriander brings a bit more zing.

I did this for a dinner party to celebrate my husband's 50th last week and had so many requests for the recipe!! Going to try it with frozen yoghurt next for a healthy altenative!!

Mmm! I used ginger nuts instead of oaty biscuits, and it was great!
