For the sauce

  • 2 tbsp soy sauce

  • 1 large knob of fresh root ginger, peeled and finely grated
  • 2 garlic cloves, crushed
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar or white wine vinegar


  1. To make the sauce, mix all the ingredients together in a small bowl until completely blended. Heat the oil in a frying pan until very hot. Throw in the chicken, cashew nuts, pepper and onion, then stir-fry for about 4-5 mins until the chicken is cooked and the nuts are toasted. Pour over the sauce and simmer with a splash of water. Remove the pan from the heat, then stir through the watercress just before serving with boiled rice.

Delicious!!! "forget packet sauces"???? You still need a packet of hoisin sauce!!!

hoisin sauce is an INGREDIENT and not a packet sauce, just like soy sauce!!!!

Simple, healthy and delicious. Cooking for three I added an extra pepper and some green beans, I used the same amount of sauce that is indicated for 4 people and I only added one bag of watercress

the sauce was delicious! next time might make a little extra...couldn't get watercress on its own so used a mix with rocket and spinach which worked just as well. LOVE cashew nuts in stir fries :)

The only reason I tried this recipe was I had a big bag of watercress that needed to be used up, so I searched for recipes using it, what a lucky find, 25 minutes from start of prep to the table and a tasty filling meal, full of lovely textures, who needs a takeaway when you can whip something like this up in minutes!! Will definitely do again and again!!

I'm not usually a fan of stir fry's but the flavours are delicious. Have made it many times since!
