  • 4 boneless, skinless chicken breasts
  • 2 thick slices wholemeal bread
  • 2 tsp dried mixed herbs
  • 400g can chopped tomato
  • 1 garlic clove, crushed
  • 1 tsp balsamic vinegar

  • 2 tsp tomato purée
  • 350g frozen green bean
  • handful flat-leaf parsley, chopped, to serve


  1. Heat oven to 190C/fan 170C/gas 5. Split the chicken breasts almost in half and open out like a book. Place in a non-stick roasting tin. Whizz the bread into crumbs in a food processor, then mix with the herbs. Mix the tomatoes with the garlic, vinegar and tomato purée. Spread the sauce over the chicken, sprinkle with the crumbs, then bake for 20-25 mins until the chicken is tender.

  2. While the chicken is cooking, boil the frozen beans for 3-5 mins until just tender. Serve the chicken, sprinkled with parsley, on a bed of beans.

chicken turned out very tender and succulent. my boyfriend loved it. i will be making it again.

I found this to be really tasty and will be making it again. There was nothing bland about it. I seasoned the chicken before coating it and also, five minutes before the end of baking the chicken, I sprinkled some grated cheddar on top.

Ok felt it was a bit bland. The breadcrumbs were not crispy but just seemed to soak into the tomato sauce! I did not season chicken prior to cooking perhaps this would have helped.

Not bad... a a bit bland. Make sure to season the chicken well (I didn't) and don't skimp on the herbs in the breadcrumbs. Might add a few chilli flakes in there as well to bring it to life a little next time. :o)

Made this for dinner tonight. Always have garlic in the cupboard but just returned from holiday and had none, so sprinkled garlic salt on the chicken before spreading on the tomato mixture. It was delicious and I will definitely be cooking this again. Served with fresh runner beans and broccoli, but also did some potato wedges with it to make a more substantial meal.
