  1. Cook the couscous or bulgur wheat in vegetable stock according to pack instructions. Trim the ends off the courgettes, then cut into slices.

  2. Heat a griddle pan or grill. Drizzle the courgette slices with oil, then season. Cook for 2 mins, then turn over and cook 1-2 mins more until softened and golden brown. Tip into a large bowl along with the cooked couscous or bulgur wheat, then mix through the remaining ingredients. Serve at room temperature.

Really easy to make. It looks pretty and colourful and is full of fresh flavours. The lemon, parsley and feta complement each other well. Just ate it for lunch and I think it makes a lovely meal in itself, but I was thinking of making some falafel to serve with it when friends come over for dinner. Will definitely be having this again!

It says the carb content is 0g, but I thought couscous was quite high?

Simply gorgeous. Pretty much all my guests asked for the recipe. I used 1 courgette and replaced the other with a red bell pepper, and made the couscous with vegetable stock rather than water as indicated on my packet, but other than that I followed it to the letter. This will become a summer go-to!

Will definitely be making this again. I added the whole block of feta ( you can never have too much cheese) and drizzled some extra virgin over at the end. Think I'll try frying some red onion in the griddle pan next time and add that too. Nice easy recipe. Only real faff was having to fry two lots of courgette as my griddle pan was too small.

absolutely lovely recipe.have also added red onion and chargrilled some red and yellow peppers.pine nuts or any nut add a lovely texture too.

Just made it and is absolutely delicious. Used bulgur wheat instead of couscous and it turned out beautifully. Will do it again and again.

Excellent recipe, tasty and quick. I added slightly caramelised red onions for a contrast to the other tangy ingredients, it was lovely!

Loved it. Best couscous recipe I've done, and believe me Ia have had some couscous flops. I added roast peppers too, and used the oil from roasting the peppers and courgettes. Fab taste. I added feta, which I love, but it would be fine without it. A very easy recipe. I know that this will become a regular
