  1. Cook the sweet potatoes in boiling, salted water for 5-7 mins until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 5-6 mins until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 min, add the tomatoes, then cook for another min.

  2. Pour in 100ml boiling water and mix well. Simmer for 5 mins, add the spinach, then cook for 2 mins until wilted. Fold in the potatoes and heat through. Serve with rice and naan breads.

I froze a couple of portions of this and we had it this evening and it was lovely. Just popped in the microwave until piping hot (scolded my mouth actually as I couldn't wait for it to cool down before I ate it!) the sweet potatoes broke down quite a bit but it wasn't necessarily a bad thing, just gave it a thicker texture.

This is a lovely simple curry that I make often. I wasn't too sure about sweet potato in a curry and am not a great fan altogether but this recipe has converted me. Just a bonus that its good for you too. Only slight thing to note is that I have found it doesn't freeze all that well.

This curry was amazing and my husband agreed, it really did taste like something you would get at a good curry restaurant! It was so quick and easy as well. I used Balti curry paste as I couldn't get a Rogan Josh one (used 3 tablespoons) and I used a tin of chopped tomatoes, other than that everything else was as per the recipe. I will make this over and over again.

Absolutely yummy, the whole family loved it and I can't wait to make it again. Think it cost about £5 to feed us all a good healthy meal.

Just be aware of the added calories when serving this with rice. We used basmati rice and allow 75g per person as per the instructions on the packet. The results were lovely but I was startled to read later that the 75g of dry rice = 195g of cooked rice = 692kcal. That's per person. So the total calorie count for this meal is 281kcal (shown in the recipe) for the sauce and 692kcal for the rice. Total = 973kcal. And that's before you reach for the Naan bread!

According to my packet of basmati rice 180g of cooked rice equal approximately 192kcal, so I am not sure you got that right
