One-pot suppers aren't just for the colder months. This light, fresh stew just needs crusty bread to mop up the juices

A good basic recipe but I think it needs some work to make it great, would definitely recommend adding garlic, onion, courgette, mushrooms and carrots, needs bulking out a fair bit. Make sure you season well as I found it to be a little bit bland, will make again but with some changes (perhaps some chilli, olives and possibly some pinto/cannellini beans etc as other people have mentioned)

I made this for my sister and brother-in-law and we devoured the lot. I added 4 whole peeled cloves of garlic at the same time as the potatoes and peppers and some peas at the end with the basil which gave it an excellent splash of colour, although trimmed green beans would also work well.

Love this dish, used chicked breasts instead of thighs and white wine vinegar instead of white wine, it gives it a lovely tangy taste, yum..

Great midweek meal, I used boneless chicken thighs. Easy to make and full of flavour. True I would not think of a stew for a hot summer evening but this was a must!!

I tried this recipe using chicken breasts which i braised in the stock and then shredded into the liquid before serving. I also added garlic, chilli and lemon. It was delicious.
