  1. Simmer the onion and the curry paste with a splash of water for 5 mins in a large saucepan, stirring from time to time. Heat the milk in a jug in the microwave.

  2. Add the vegetables and quinoa, then stir in the milk. Bring to the boil, simmer gently for 10 mins until the quinoa is cooked. Check seasoning. Serve with warm naan bread.

This was a really easy, really tasty midweek supper. First time we'd tried quinoa and, in this recipe, it went down a treat. Will definitely be making this again.

I too was rather dubious about this recipe so I tweaked it by adding a sachet of coconut cream to the milk. I didn't use frozen veg either but just threw in a little of whatever was in the fridge. Totally delicious! Even without the changes I made I still think this would be really tasty.

the milk did not do it for me....first the taste of side dish boiled in milk....then i feel 1l milk was tooo much! never again.

I think this was a bit bland. If I made it again I'd probably use stock and coconut milk instead of normal milk.

Made this using Tikka paste (I thought Korma might be a bit sickly) and rice and it was very good. Needed a bit more liquid though as it turned out more of a biryani than a soup, but the taste was good and it was a nice way to use up leftover veggies in the fridge at the end of the week! Might have a go at using coconut milk next time just to see what the difference us.

This recipe is not a laksa, there are some great recipes out there that, granted take a bit longer, are fab (I would recommend the Something for the Weekend tofu laksa). This produced a watery curry like broth, a laksa is supposed to be lovely and creamy. Try coconut milk at least, normal milk doesn't cut it.

I thought this was pretty good. I was dubious as it looked a bit odd but it was better than I'd expected. I used a vindaloo paste and the heat was nice, think with a milder one it might have been bland.

I've just started to take my weight training a bit more seriously and read somewhere that quinoa is a good source of protein so thought I'd give this a go. Following the advice above I made with tin of coconut milk instead of milk, fresh sliced carrot (sticks) and asparagus as my veg (though put them in half way through). Thought it was tasting a little bland whilst it was cooking so put in a teaspoon of cumin and coriander, a hot chilli, a handful of cashew nuts then some chopped coriander just before serving. Turned out very delicious indeed - so my rating is based on the recipe after my additions.

This was tasty, but despite heating the milk separately, mine still separated. I also think to get a soup it needs a bit more liquid - my quinoa was like a sponge, and I ended up with something a not remotely resembling the picture! I also used half and half coconut milk / normal milk, and it tasted delicious - just didn't look too pretty!

I had been looking for simple quinoa recipes, and when I saw that this gives you 3 of your 5-a-day, I had to give it a try. The best thing about this recipe is how simple it is! It's one of the easiest meals I've ever made. No stress whatsoever. It was absolutely delicious. I've never tried laksa or anything similar before, but I really enjoyed it. The only hiccup I had was, rather than more of a soup consistency, mine ended up a lot thicker! It was more of a paste, really. Delicious, all the same, but I think next time I'll either take it off the hob sooner or just use more liquid. I forgot how absorbent quinoa is.
