  • 250ml chicken or fish stock
  • 100g crème fraîche
  • 140g frozen peas
  • 140g frozen broad beans
  • 4 skinless salmon fillets
  • small bunch chives, snipped
  • mash, to serve


  1. Heat the oil in a large, deep frying pan with a lid. Cook the leek for 5-10 mins until soft but not coloured, then pour in the stock. Simmer for a few mins until reduced slightly then add the crème fraîche and season. Cook for 1 min more.

  2. Tip in the peas and beans, nestle in the salmon fillets, then turn down to a simmer and cover. Cook for 12-15 mins, depending on the thickness of the salmon, until cooked through. Sprinkle on the chives and serve with mashed potato, if you like.

This was very nice and very simple to make. Didn't have beans so used broccoli and served with crushed new potatoes. I cooked this for two but left the liquid volumes as they are for four. Glad I did - it gave us plenty of sauce. Going to use a fish pie mix next time.

Sooooooooo tasty!! I used smoked salmon fillets which gave it a big boost of flavour! Going to Make this a regular midweek meal!

Delicious. We only had runner beans to hand and it was still very tasty. The children ate it all! Look forward to trying the chicken version too.

Found this recipe to useing up the left over crème fraîche. This is such a smple, quick, and delicious recipe. As I like flavour of the onions, I added half of a red onion at the beginning. Also for side, I went for sweet potatos.

Quick, easy, tasty and a relatively healthy mid-week option. We tend to serve with pasta, and it goes really well with home made tagliatelle. A firm favourite in our household.

What a simple healthy tasty little recipe! I love it when i can get something on the table in less than 30 minutes...I used fresh in season broad beans, and substituted the peas (we eat enough of them) for frozen spinach, really yummy. We definately be a regular dish in our house.

Delicious. I didn't have any herbs but added a squirt of lemon juice and used green beans instead of broad beans.

Ideal midweek meal. Relatively quick and fuss free. I swapped (frozen) spinach for the beans and added peas 5 mins before the end. Added more crème fraiche too but next time would add more stock or use white wine as well/instead. My sauce split so it didn't look fab but tasted good. Oh and I forgot about the chives!

I loved this. I did it for 2 people in a large pan, so the liquid had more or less disappeared by the end. However, the salmon was done to a turn, and the creamy (if not very wet!) veg were delicious.
