  • 2 tsp caster sugar


  1. Heat oven to 200C/180C fan/gas 6. Line a 21 or 22cm square, shallow baking tin with baking parchment. Put the flour, ground rice and sugar in a bowl with the butter and rub in until fine crumbs form. Stir in the milk with a cutlery knife. Stir in cinnamon and cloves. Tip three-quarters into the tin and press down evenly. Bake for 15-20 mins until golden and crisp looking.

  2. Stir the jam in a bowl to loosen a little, then spread over the base. Crumble over the remaining slice mixture and bake for 5-10 mins more until the topping is golden. Scatter with 2 tsp caster sugar, cool in the tin, then slice into squares.

Irina - ground rice is simply rice that has been ground into a powder, and is normally used to make milk puddings. You should be able to find it in the cooking section of your local supermarket, along with semolina, custard powder etc. You can also use it when making shortbread biscuits.

Have made this several times now. Everybody who has tried it reaches for a second slice. Very moreish!

These didn't really work for me - the outsides stuck to baking paper and I could therefore only salvage the slices in the middle of the tray and whilst I liked the flavour of the cinnamon and cloves, I probably did not use good enough quality raspberry jam as they were just too "jammy" (I appreciate that might not make a huge amount of sense) - I should have read Janet's comment above!

Made the lemon bars and the toffee nut squares as well and all are fantastic. The combination of the spices really complements the raspberry jam,it is worth using really good quality jam.

I made the lemon version of this and took it to the races - very successful. I also took the leftovers to work and people were fighting over the last slice!! Very easy to make and delicious!
