  1. Cook the pasta in salted water for 10-12 mins until al dente. Meanwhile, heat the oil in a medium pan. Add the sliced onion and pepper and fry, stirring frequently for 10 mins until golden. Stir in the garlic and spices, then tip in the tomatoes, half a can of water, the corn and bouillon. Cover and simmer for 15 mins.

  2. Meanwhile, toss the avocado with the lime juice and zest, and the finely chopped onion.

  3. Drain the penne and toss into the sauce with the coriander. Spoon the pasta into bowls, top with the avocado and scatter over the coriander leaves.

We (2 of us) really enjoyed this recipe however we found the quantity excessive. We have enough left over for tomorrow!!! We'll do this again but half the quantities. Very tasty and pretty healthy too. We were surprised at how well the corn worked in the sauce. Loads of tastiness in what is a vegan meal. Win win.

Neither me or my husband are vegetarian but we both enjoyed this meal. It was quick to make for a midweek dinner and used a lot of ingredients I had in the cupboard. The avocado topping was a great addition as it cut through the spice of the pasta.

Really tasty meal. Didn't think there would be enough pasta when I measured it out but it was a healthy plateful - in both senses of the word!
