  1. Cook the pasta in salted water for 10-12 mins until al dente. Meanwhile, heat the oil in a medium pan. Add the sliced onion and pepper and fry, stirring frequently for 10 mins until golden. Stir in the garlic and spices, then tip in the tomatoes, half a can of water, the corn and bouillon. Cover and simmer for 15 mins.

  2. Meanwhile, toss the avocado with the lime juice and zest, and the finely chopped onion.

  3. Drain the penne and toss into the sauce with the coriander. Spoon the pasta into bowls, top with the avocado and scatter over the coriander leaves.

Made this tonight for my husband and me it was yummy I didn’t add the coriander though as I really don’t like it. Would definitely make again.

A really nice change from a standard tomato and basil sauce, and the avocado salad on the top was a great addition. One thing I will say is that it wasn't massively filling, I did find myself snacking quite a bit throughout the evening!

Thought I’d try this tonight as it was quick, easy and I had all the ingredients in the house. Well it was delicious! Followed the sauce recipe to the letter and it was very tasty and a good quantity for 2 hungry adults.

Disappointing and badly written. A recipe that starts by telling you to cook pasta first and then gives you instructions for the sauce that has a cooking time of 25 mins is silly. The pasta will be hanging around and sticking together long before the sauce is ready. The taste of the sauce is okay but the whole dish is not very subtle and a bit weird.

A nice simple recipe. I used some strongly concentrated vegetable stock instead of the bouillon powder which turned out fine. The lime juice on the avocado really finished it off for me.

Very very nice recipe, I added sliced chicken in to my dish, a nice addition which worked well. Very tasty, and healthy too!

I cooked this last night. I'm not veggie, but I was cooking for a veggie friend. This is absolutely delicious, really satisfying, plenty of it, too. I didn't miss the meat one bit. This will by my new go-to veggie dish.

The whole family enjoyed this and I had pretty much everything in to make this except used white pasta and chicken stock. The kids thought some olives in it would be nice

I live in Perú. I can't say I have ever seen canned tomatoes - or they are really expensive. But fresh toms plus water seems to do the same thing. A subtropical country doesn't auger well for raspberries etc so any recipe with those ingredients also gets some adaptation! Good food, BBC!
