  • 2 x 400g cans black beans, drained and rinsed
  • 35g sachet fajita seasoning of your choice
  • 2 x 400g cans chopped tomatoes with chilli
  • 6 tortillas

  • 140g Monterey Jack cheese or cheddar, grated


  1. Heat oven to 180C/160C fan/gas 4. Heat a non-stick frying pan, add the black beans and fajita spice mix, stir together and cook for 1-2 mins. Add the tomatoes and simmer over a low heat for 10 mins.

  2. Cut the tortillas in half. Lightly grease a 2-litre baking dish. Spread a third of the bean mixture over the base of the dish, followed by 3 tbsp of the cheese and a layer of tortillas. Repeat the process, finishing with a tortilla layer on top. Sprinkle over the remaining cheese. Bake for 15 mins until golden.

Made it twice now, both times with black beans and kidney beans, second time with turkey mince. I am so pleased with this recipe, I have been telling any of my friends and family who would listen as it's that delicious.

I don't normally review recipes, but I tried this tonight and have to say that it was delicious, I adapted the recipe slightly and used kidney beans as well as black beans and also added some extra chilli powder. I would definitely recommend!!

I made this last night for me and my husband - I halved the recipe and it worked out just fine. It was delicious and the beans made up for the fact there was no meat. The spices worked well together and overall it was a great success! Will make again :)

This was so quick and easy, and soooooo tasty. Plus under 500 calories, brilliant. Used mixed Mexican beans and lighter cheese to reduce sat fat content

I love this recipe, it's unusual - almost like a mexican lasagne. We have it as a proper meal with 500g mince and make it really spicy by adding more chilli, etc. Really nice - definitely will be making again!

Had this last night and it was absolutely fantastic. I use 1 can black beans and added some mince meat, super easy! Will defenitely make it again.
