  1. Heat oven to 200C/fan 180C/gas 6. Put the tomatoes onto a baking tray, rub with a little oil and some seasoning, then roast for 5 mins until the skins are starting to split. Add the fish to the tray, top with most of the lemon zest and some more seasoning, then drizzle with a little more oil. Roast for 8-10 mins until the fish flakes easily.

  2. Meanwhile, cook the beans in a pan of boiling water for 3 mins until just tender. Drain, then tip into a food processor with the rest of the oil, garlic, basil stalks, lemon juice and stock, then pulse to a thick, slightly rough purée. Season to taste.

  3. Divide the tomatoes and mash between two plates, top with the cod, then scatter with basil leaves and the remaining lemon zest to serve.

Great recipe! I used butter beans instead of soya beans as I couldn't find them in the supermarket, and I added basil leaves as well as the stalks in the mash and it was beautiful and fresh with the lemon too. Definitely recommend this recipe and I'll be cooking it again soon!!

This was absolutely delicious. The flavours complimented each other so well. A huge hit with my other half, who is a bit hard to please, so a winner for me. It just took a bit longer to cook the soya beans to 'just tender', 8 minutes. But still gave it a 5. Wonderful!

Lovely creation by using an alternative mash like soy beans! Didn't know that it could rival the taste of classic potato mash! And the lovely twang of lemon zest & juice add excitement to the taste. Simply delicious and easy ~ great for quick suppers with family.

Beautiful. Used Seabass as Cod was too pricey but itvwas heavenly. Couldn't find soya beans so used butter beans instead. Thus got a big thumbs up from himself who is not one for venturing outside of the mashed potato zone :) Definitely will make again.

I used broad beans which worked well but there was too much lemon for my liking so next time I will use less. Fish was absolutely gorgeous.

I couldn't find soya beans (went to 3 supermarkets with no luck) so I substituted butter beans instead, which were delicious. It was very garlicky but I like garlic so not a problem for me. I also didn't bother seperating the stalks/leaves and just chucked it all in! Found the lemon rind on top of the cod very bitter - I ended up scraping it off and if I did this recipe again I might just cook it in a foil parcel with a bit of lemon juice and roast the tomatoes seperately.

Absolutely delicious. In less than 30 min ! I used frozen fava beans instead of soy beans. I added 8 small and thin shiitak withe the tomatoes. The fish was very thick, so I baked it 10 minutes and I was afraid it would not be cooked through, but it was just prefect. Not undercooked, not overcooked, just perfect. I will definitely do it again !

Super quick, super easy and super delicious. Great week night meal and very healthy. I forgot to add the lemon juice to the mash but it still tasted great.

I roasted plum tomatoes for 40 mins at 180 fan with 2:1 olive oil:balsamic vinegar and a teeny sprinkling of caster sugar. Cooked the oiled & seasoned cod without lemon zest for 8 mins on its own and it was perfectly cooked and didn't 'leak'. Bean mash was delicious and the whole thing with the tomatoey juices was just great. Lots of yums and mmmms. Couldn't fault it - 5*
