Islander cocktail

Ingredients
- sea salt, to garnish
- seaweed or kelp powder, to garnish (optional)
- handful ice
- 40ml dark rum
- 1 tbsp green chartreuse
- 1 tbsp mezcal
- 25ml lime juice
- 2 tsp sugar syrup or gomme
- 1 tbsp grapefruit juice
- 2 dashes chocolate bitters
Method
- STEP 1
Rim a coupette glass with salt and seaweed, if using. Fill a cocktail shaker with the ice and then add all the remaining ingredients. Shake well to combine, until the mixture is chilled. Double strain into the glass.
