As I live in Greece I'm always looking for something simple for the hot evenings here.....& this is just the thing! I poach chicken breasts with some "Chicken Seasoning" & leave to cool in the water, which keeps the meat nice & moist. Don't find spring onions here very often, so use sliced red onion & I always add a couple of thinly sliced Roasted Red Peppers in Oil (a very useful Greek product).

We substituted the honey with mango chutney, which gave it a really nicer and sharper taste.

My husband LOVES this! I too have slightly amended the recipe to make more sauce (basically more mayo, mustard and honey) It's also great as a lunch for the following day.

My family love this dish, we have made it on various different occasions including BBQ'S and everyone has raved about how tasty this recipe dish is. It so quick and simple, though I would agree that a larger quantity of sauce is needed!

This is really great for packed lunch, dinner and picnic food, i used it for all three. Second time I made it i used low fat creme fraiche which was still really tasty and lower in fat.
