Method

  1. Heat oven to 200C/180C fan/gas 6. Put the red onions, peppers and courgettes in a large roasting tin, toss in 2 tbsp oil and season. (You may need to do this in 2 tins.) Pop in the oven and cook for 25 mins until the veg is tender and beginning to turn golden.

  2. Meanwhile, cook the rice following pack instructions. Whizz together the parsley, cashew nuts, remaining oil, the garlic and seasoning to make a pesto. Stir the chickpeas and halloumi into the roasted veg and cook for 10 mins more. Fork the parsley pesto through the rice, spoon over the veg and serve.

This is a great recipe, really wholesome too. The halloumi makes it.

Delicious, even without halloumi (parmesan shavings are great on it). I did cheat and used Tilda steamed brown basmati rice, the roasted vegetables one. I also overdid the garlic in the pesto but it was still quite nice!

I can't rate this highly enough. It was a taste sensation. The rice especially was delicious. A lovely colourful dish. It's a keeper.

Made this tonight for 6 people. Used 1.5 x everything except halloumi (2 packets) and chick peas (2 tins). Was just enough for 6 hungry people. Loved by all, including 4 older kids. Would make a bit more rice if making again but we all eat a lot. Loved the green rice, herby and creamy
