  • 4 large vine tomatoes, cut into irregular wedges
  • 1 cucumber, peeled, deseeded, then roughly chopped
  • ½ a red onion, thinly sliced

  1. Place 4 large vine tomatoes, cut into wedges, 1 peeled, deseeded and chopped cucumber, ½ a thinly sliced red onion, 16 Kalamata olives, 1 tsp dried oregano, 85g feta cheese chunks and 4 tbsp Greek extra virgin olive oil in a large bowl.

  2. Lightly season, then serve with crusty bread to mop up all of the juices.

Reminds me of being in Corfu in the summer. A squeeze of lemon along extra olive oil really aided this dish for me and I also added an avocado that was in the fridge that just sat on top. A perfect Sunday evening supper.

We have been making this salad often this summer. We have been adding a squeeze of lemon and fresh mint. It tastes delicious.

Delicious!!! I have to thank Frogma for the advice with the onion, I left the slices of onion in a bit of lemon juice while preparing the rest of the salad, at the end I added the onion with the lemon juice to the salad and it worked excellent. I changed the amount of ingredients 3 large tomatoes and 2 cucumbers. My family love it THANKS!!!
