  1. Heat grill to high. Heat 1 tbsp olive oil in a large frying pan, then soften 1 chopped onion and 1 finely chopped red pepper for 5 mins.

  2. Stir in 1 crushed garlic clove, fry for 1 min, tip in 400g chopped tomatoes and 500g gnocchi, then bring to a simmer.

  3. Bubble for 10-15 mins, stirring occasionally, until the gnocchi is soft and the sauce has thickened.

  4. Season, stir through a handful of torn basil leaves, then transfer to a large ovenproof dish.

  5. Scatter with torn chunks of half a 125g mozzarella ball, then grill for 5-6 mins until the cheese is bubbling and golden.

I had so much fun with this - made my own gnocchi after seeing how simple it is (just potato, flour and egg + some thyme). Would recommend frying the gnocchi after you boil it to add some extra flavor. Also see below comments for inspiration on extra ingredients to add ! Definitely going to make this again using some of the suggestions below :)

It's a simple and quick recipe- great for beginners! However I would have added some salt, pepper and chilli peppers to give the gnocchi more flavour. In my experience this recipe makes 890g. A bit small of a serving size for four people (222.5g), maybe think about adding some veggies as a side dish, if you're looking to be healthy!

Added sliced italian sausage, diced courgette, a little more garlic and another tin of chopped tomatoes and simmered for 15 mins before adding the gnocchi. Found the recipe a bit light on herbs so added a shake or two of Oregano. I also had a little leftover salsa which I chucked in.

At first, I found this recipe a little bland and liquidy so the second time around, I fried the gnocchi with the onion so it didn't lose its shape in the sauce, then added much more mozzarella as well as a stock cube to the sauce and sage instead of basil. Yum!

After reading comments I also added spinach and italian sausage. Recipe is really easy and delicious. I'd make again but i would add mushrooms instead of red pepper only because i prefer that flavour to the strong red pepper flavour you get in this dish.

This is a great recipe. It is quick and easy to prepare, perfect for swimming lesson nights when I have very hungry children. I served mine with garlic bread.

This is a great base dish which can be adapted to make it to make it even better. I added chorizo, passata, more garlic and herbs and more mozarella. Yummy, everyone loved it.

I added meat balls, mixed herbs and a pinch of chilli. I used the whole mozzarella ball. It was yummy and quick to make.
