  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn’t catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.

  2. Tip into the tin and bake for 45 mins on a middle shelf – check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

Yes, but there is sugar in chocolate and none in cocoa, I think that's why there is so much - mine is in the oven as I type, may have to eat my words (or brownies!) when I taste them!!

This is a really nice recipe!, I've posted some picture on my blog... Very gooey, definately 50mins is a perfect time for this, you must make sure you let it rest and firm up!!! Enjoy!

These are fantastic. The coconut gives it something extra and adds some texture without being too strong (I'm not usually a fan of coconut). Everyone who has one raves about them and I haven't found any other brownies that are anywhere near as good as these. They are really simple to make too. This is what I usually bake when a friend is having a bad day.

Don't scratch the non-stick off your pan with the sugar like I did :(

I don't know what happened to my butter-cocoa-sugar mixture: turned-out all lumpy and grumpy... I was going to throw it away (and throw in the sponge...) but I decided to give it a try. Well: if that happens to you too, don't give up! Most lumps melted while cooking, but the few left gave these brownies some crunchiness which was not bad at all...

Have made this recipe around 4 times now and it always turned out lovely! So so simple to make and great for if you fancy baking or for an occasion. Everyone's getting one for their birthday now :)
