  • 250g basmati rice
  • 400g special mixed frozen vegetables
  • a generous handful of raisins
  • 1 vegetable stock cube
  • 2 tbsp korma curry paste
  • a generous handful of roasted salted cashew nuts

  1. Boil the kettle. Get out a large microwaveable bowl and pile in the rice, veg and raisins.

  2. Pour 600ml/1 pint boiling water over the rice mixture and crumble in the stock cube, then stir in the curry paste. Cover the bowl with cling film, leaving a small gap at the side to let out the steam. Cook on full power (850 watts) for 12 minutes – if your microwave is less powerful, add 2 minutes.

  3. Remove from the microwave and stand, still covered, for 5 minutes to complete the cooking – if you don’t let it stand the rice will be too nutty. Fluff up the rice, scatter with cashews and serve.

This was really quick and easy, and also tasty! Had to cook for 19 mins in the microwave though before letting it stand for 5 mins. Kids loved it so it's a winner! The raisins really made the dish.

Very quick and super easy to make but found it a bit bland and also dry ( if intending to have leftovers). It’s fine - don’t get me wrong. I have used it for lunches and added a couple of spoons of korma sauce from a jar (doesn’t work brilliantly but it’s fine). I would make again but will try fresh veg and maybe a diff sauce or at least have a nice sauce that can be added at the end. It’s so speedy which is a major plus.

Currently without an oven so looking for simple oven free food. This was so quick and easy. My microwave needed 2 more minutes.

Wooow, what a dish. I used unflower Seeds instead of cashews, and bulghur instead of rice. Raisins gave unbelievable pop of flavor. This will be often on our menu!

This is super simple to make and very tasty. Make sure you give it a really good stir before it goes in the microwave. We enjoyed it with a couple of soft boiled eggs.

Great dish considering how quick it is to make, you could turn up to a BBQ with this as a cold rice dish and everyone would think you'd made loads of effort.

hi, I have used this recipe since 2002 and find it great. Am now using it again after 4 years, and it is still great.

I used sultanas instead of raisins, jalfrezi paste instead of korma, and cooked it for 14.5 minutes in a 850w microwave. I then put it in the fridge and had it for lunch the next day - was gorgeous!

I'm guessing its just boiling some rice, so whatever the instructions are on the side of the rice packet?
