Make a classic coronation chicken filling to serve with jacket potatoes or in sandwiches and salads. It's an excellent way to use up leftover chicken after a roast

  • 6 tbsp mayonnaise
  • 2-3 tsp mild curry powder, to taste
  • ½ tsp ground cinnamon

  • 1-3 tbsp sultanas, or to taste

  1. Mix the mayo, curry powder, cinnamon, chutney and sultanas together and season with black pepper. 

  2. Add the shredded chicken and stir to coat in the sauce. Stir in 2 tbsp water to loosen if needed, then season and serve as desired.

Regarding the filling, I combine mayo and creme fraiche (low fat) - found this to be less dense and a creamier taste. Add a bit of aubergine pickle to the mix also, to give it a bit more spice.

Mine is much Quicker & less ingredients, get a bottle of Tesco's 250ml curry sauce in squeezy bottle (90p) & any mayonnaise. You can make as little as you need or as much as you want, as all you do is put half & half of the 2 ingredients in a mug, jar or bowl & mix. It tastes & is as yummy as any coronation sauce you'll have bought. I love this as I hate fruit in mine, but if you want that too just add them to the mix then add chicken. It's brilliant as long as you've sliced, chunks or left over roast chicken, you'll always have coronation chicken within a couple of mins..

Made this and had no mango chutney but followed the advice below and used marmalade. It was delicious!

My mother in law made this for me and it was delicious, usually avoid it but this is really tasty. She used marmalade rather than mango chutney though as we didn't have any.

This recipe is amazing, I've been looking for this for ages!! Tastes just like Coranation chicken from a deli counter! I used korma powder I had in cupboard and followed recipe exactly thank you so much for sharing.

Absolutely delicious, didn't change a thing. Had it in a wrap for lunch, will make again and would be ideal party food too!

Absolutely delicious, so easy to make. Used quantities as rough guideline, forgot to use pepper (didn't miss it), added grated carrots to bulk it up a bit. A winner!
