  • 250g blackberries



    A purply black-coloured berry comprising many individual seed-containing fruits surrounding a…

  • 50g golden caster sugar
  • ½ tsp vanilla extract


  1. Put the blackberries and sugar into a small pan with 100ml/31⁄2fl oz water. Bring to the boil, then simmer for 5 mins until the fruit is soft. Stir in the vanilla, remove and cool a little.

  2. Tip the contents of the pan into a blender or food processor, and whizz to a purée, then strain through a sieve, rubbing it through with the back of a ladle or spoon. Serve warm or chilled. Keeps in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.

delicious and easy to make, makes ice cream something really special. I also added a desert spoon full of sloe gin (berries and sloes picked by me and my husband, love to do a bit of foraging) and this made it very tasty. will definately try with other fruits too. :-)

Going to try this with Tay Berries and redcurrants as it seems pretty idiot-proof. I'll try and think on to let you know how it went :-)

Delicious and simple! I used blueberries, since that was what I had. Nobody really fancied dessert until I plonked the sauce on the table and then everyone was clambering for a bit of cake! I will definitely be making this again, with a variety of berries I'm sure!

Made this exactly as it told me too and was so yummy. I will definatley be making this one again, so easy to make and great on top of pancakes warm or on ice cream cold. Also nice in some yoghurt. Picked the blackberries and made it all within one hour.

I used less sugar and added some honey instead. Had it with pancakes with pieces of banana and apples - lovely Sunday breakfast! Our faces are still covered in blackberry coulis!!

This is fabulous! I've made it a fair few times now, but I don't always like to strain it after whizzing it up as I quite like the bits. It tastes yummy with melon, cooked apple and as a topping to a plain cheesecake. Delicious!
