Ingredients

  • 12 teaspoons jam (of your choice of flavour)
  • 28g sugar
  • 255g plain flour
  • 140g hard marg or butter
  • 6 tbsp cold water

Method

    1. Preheat the oven to Gas Mark 5
    2. Sieve the flour into a mixing bowl and rub in the marg until it resembles fine breadcrumbs
    3. add the water tablespoon by table spoon until it is a moist dough
    4. Grease a cupcake tray and cut the pastry.
    5. Put the jam into the pastry and bake on Gas Mark 5 for 12-15 mins

I have never heard of sugar in pastry for jam tarts and I asked my mother and she has never done that in 50 years

very simple recipe but the jart shells were very bland, a little claggy and floury tasting on my first attempt. Second time around i changed the amount of sugar to 50g and this improved them immensely. Using a very good quality, tart lemon curd is my family's favourite combination, the contrast between the pastry and the lemon curd is just delicious. :)

Trust me there's enough sugar in the jam! We are wayyy to sugaraddicted and you have no idea what it does to our bodies

i think this is really good and i loved it they teased very nice and all the family liked them. but i at first well maybe they should be more sugar as i have a family who loves the sugar.

I chose this recipe as it looked simple enough and did work well. But when I came to actually make the jam tarts I found that the ingredient of the sugar wasn't mentioned at all in the method! I'm a bit of a novice and didn't really know what to do! In the end I put it into the dough and it seemed fine, it just threw me when I was trying to make them quickly one morning.
