Method

  1. Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.

  2. Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.

  3. Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

Super easy recipe! However I think it needs a bit more oomph so I usually added 2 cooked chicken breasts, kale or spinach and swap the ham for pancetta. You can really experiment. Really tasty - real comfort food!

Great recipe with amazing flavour. Did find it a bit problematic adding the flour in first and then adding milk as it created lumps. Managed to get it fairly alright in the end. Used smoked bacon lardons instead of ham and that gave the whole dish amazing flavour. Added some garden peas and pre-steamed kale for a bit more veg, and added wild sage stuffing/breadcrumbs on top too. Easy, affordable and really tasty. Will be making it again.

Very useful recipe that is easily adapted to anything in your fridge. As we don't eat meat, I missed out the ham and put in extra mushroom and spring onions with lots of ground pepper, came out great and is a weekly staple in our house. I reduce the pasta as there's only 2 of us, to about 350g which does enough for 2 dinners and lunch.

Made this today. Instead of ham, mushrooms, flour, butter and pasta, I used a tea bag and greatly reduced the amount of milk. Ready in under 2 minutes. Very refreshing!

Very tasty pasta bake we used bacon instead of ham and also added some sweetcorn. Took some advice from previous poster who advised to use less pasta ,500g would of been way too much. Will be trying this again

Eating this as I type the comment. Easy to make, and tasty, I added some sweetcorn as well as ingredients listed. 500g of pasta is quite a lot though, so make sure you have a decent sized pan and oven dish to put it all in.

Used Quorn ham instead of the real thing as I'm vegetarian. Also added garlic in with the mushrooms. Really tasty, easy and quick to make. Will definitely be cooking again :)

I've lost count of the number of times I've made this in my home and always varied the ingredients. Leftover chicken breasts with ham, chicken and bacon, chorizo etc. basically, any meat or veg I've needed to use up. I've also added some passata on occasions to make a creamy tomato sauce for a change. Basically, this dish is loved in our house as it never seems to be the same way twice! Brilliantly versatile, filling and tasty. Yummy!
