  • In a Bowl
  • 125g Plain Flour
  • 25g Coco powder
  • 1tsp baking powder
  • In a Jug
  • 1 egg
  • 60g sugar
  • 2tbsp oil
  • 100ml milk
  • For the icing:
  • 500g icing sugar
  • 1/2-1 tbsp warm water


    1. preheat the oven to 160C seive the bowl ingredients into the bowl
    2. mix the egg,milk, oil and sugar together in the jug
    3. pour the egg mixture into the bowl (add chocolate chips now to make double chocolate muffins) and mix until combined but still lumpy
    4. spoon mixture into cake cases and put the tray in the oven at 160C for 20 until set and cracked at the top if not quite set put back in for a further 10 mins
    5. whilst cooking make up some icing by adding the water to the the icing sugar slowly and bit by bit until the consitency of golden syrup add more icing sugar or water if needed
    6. once muffins are done leave them to stand for 5 mins then cover in icing and eat

All of you people saying they are rubbish and didn't rise are probably rubbish bakers and can't follow a simple recipe. Me and my friend ( both of us 12 years old ) made these muffins together and they turned out perfect and raised a lot and were delicious.

I made them today ,they are perfect glad I didn't go by the comments of them being not good :)

I think it is important to remember that these are muffins and not cup cakes hence they will be more bread like as opposed to the cupcake which is in essence a scaled down cake. If I were to make this recipe again I would probably add a bit more half as much sugar again maybe a muscovado or molasses .

WARNING****DO NOT WASTE YOUR TIME OR INGREDIENTS***** I have just joined to submit this review. I made these so called "chocolate muffins" yesterday (unfortunately before I had read the previous reviews) - many have summed these "muffins" up correctly - "chocolate flavoured insulation board is a very good description"!!! It was a total waste of ingredients and should be removed from the "Good Food" website!! The mixture made 12 (I made a double mix) inedible blobs that a) didn't rise b) are so hard you'll probably break some teeth if you try eating them and c) if you do manage to take a bite without breaking teeth you'll probably choke on it!!!! This recipe should come with a public health warning!!! I have given this a 1 rating but should be 0!!!!

Thy came out fine, 6 big size muffins. But I think you should use self r. flour, or add 2 tsp baking powder if using plain flour. That's what I did anyway.. Nice with some butter on top.

Followed recipe, they rose perfectly fine .. I added some chopped up chocolate, ingrediants easily made 6 decent sized muffins. No complaints from me :)

Quite terrible, I also followed this recipe before checking the comments. They didn't rise, as there is no raising ingredient. Perhaps self-raising or a pinch of bicarb could save this recipe? Was hoping to core and fill but I'll just ice instead and hopefully don't choke!

The 1 tsp of baking powder is the raising agent

I only joined also to say please don't waste time and money on this awful recipe!! My daughter made for a competition tomorrow and they came out dense like rocks. It's too late now to make something else. I wish I'd read the reviews before. I thought we'd done something wrong, but now realise it's a rubbish recipe. That photo does not go with this recipe.

Only joined this site to say how awful this recipe for chocolate muffins is. If you like eating chocolate flavored insulation board then it might be for you. Very dry and inedible without a dollop of custard and a large cup of tea. I can only think the author of this must have got the quantity of ingredients wrong?
