  • 1l chicken or vegetable stock
  • 100ml double cream
  • 200g smoked salmon, cut into strips
  • small bunch chives, snipped

Method

  1. Heat the butter in a large saucepan and add the leeks and bay leaf. Cook over a low heat for 8-10 mins or until the leek is really soft, then stir through the potatoes until coated in the butter. Pour over the stock and cream and bring to the simmer, then gently bubble for 10-15 mins until the potatoes are really tender. If freezing at this stage, slightly under-cook the potatoes, then defrost and bring back to a simmer to finish cooking them and continue the recipe.

  2. Add two-thirds of the smoked salmon, stir through and season. Serve the soup in deep bowls with the remaining smoked salmon and snipped chives on the top.

This is a great winter recipe, real comfort food on a chilly day. We followed the recipe as is, but might try it with single cream next time

I made this more like a thick chowder by reducing the amount of stock and using single cream. It was absolutely delicious and is now one of my favourites. It's great to find simple recipes that are both tasty and nutritious

I made this soup using single cream instead of double and instead of using smoked salmon, i chopped up several fillets of salmon to make this a main meal. This was absolutely delicious! My guests loved it! Amazing recipe!

Fantastic dinner party starter! Stuck to the original recipe however, replaced the double cream with low-fat cream. This recipe is easy, can be prepared ahead of time and tastes special. Oh and the fresh chives are essential!

I made this last night. We had it with focaccia bread and it was heavenly. I made a couple of changes.. 1. Substituted bacon for salmon as I did not have any salmon. I dry fried the diced bacon before adding to soup. 2. Added 150 ml double cream instead of 100 ml Highly recommended

I really like this recipe - very tasty! Also it can easily be adapted for vegetarian friends as the smoked salmon can be added after the soup has been cooked and, of course, by using veg stock instead of chicken.
