Sauce works well with pork chops, pork fillet and sea bass

Ingredients

  • 1 medium onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tsp (heaped) tomato puree
  • 500ml white stock
  • Good splash of sherry
  • Knob of butter
  • Oil for frying

Method

    1. Put oil in pan, when hot add garlic and stir for 1 min.
    2. Add onion and stir for 1 min - cover and sweat for 2 min
    3. Add tomato puree and stir well
    4. Add white stock and boil uncovered for 20/25 min.
    5. Add sherry and stir well - leave for 2 min. on simmer
    6. Add butter stir well until butter melts.
    7. Serve!

One of my own, simple yet effective. The whole thing can be processed before the butter is added to give a fine smooth texture.
