Ingredients

  • 200gms Spaghetti
  • 2 large eggs, 1 egg yolk
  • 142ml double cream
  • Small amount grated parmesan
  • 170gms smoked salmon, sliced
  • Zest and juice of half a lemon
  • Black pepper
  • Small bunch flat leaf parsley

Method

  • STEP 1
    Cook pasta in a large pan of salted boiling water, according the packet instructions
  • STEP 2
    Whisk eggs and egg yolk. Mix in cream and parmesan. Add smoked salmon, zest and lemon juice and season with black pepper
  • STEP 3
    Drain pasta and add egg and cream mixture
  • STEP 4
    Cook over a very low heat for approx. 2 minutes. Add parsley and serve
