Quick Smoked Salmon Spaghetti

Ingredients
- 200gms Spaghetti
- 2 large eggs, 1 egg yolk
- 142ml double cream
- Small amount grated parmesan
- 170gms smoked salmon, sliced
- Zest and juice of half a lemon
- Black pepper
- Small bunch flat leaf parsley
Method
- STEP 1Cook pasta in a large pan of salted boiling water, according the packet instructions
- STEP 2Whisk eggs and egg yolk. Mix in cream and parmesan. Add smoked salmon, zest and lemon juice and season with black pepper
- STEP 3Drain pasta and add egg and cream mixture
- STEP 4Cook over a very low heat for approx. 2 minutes. Add parsley and serve
