Ingredients

  • Base

  • 170g Butter
  • 170g Caster Sugar
  • 255g Self-Raising Flour
  • 3 Egg Yolks
  • Meringue
  • ======
  • 3 Egg Whites
  • 170g Caster Sugar
  • 2-3 Cooking Apples

Method

  • STEP 1
    Preheat the oven to 180C/fan 160/gas 4.
  • STEP 2
    Grease the base of a 28cm, 3.5cm deep Flan tin.
  • STEP 3
    Melt the butter with the caster sugar in a Medium sized pot.
  • STEP 4
    Add the flour and the egg yolks, mix well with a wooden spoon.
  • STEP 5
    Spread the mixture in to the tin.
  • STEP 6
    Beat the egg white with an electric beater until stiff, add the caster sugar and beat again briefly.
  • STEP 7
    Peel the apples and grate them. Spread them over the base mixture.
  • STEP 8
    Cover the apples with the meringue.
  • STEP 9
    Put in the preheated oven for approx 45 minutes, turning the oven down after 20 mins if getting too brown.
  • STEP 10
    Cool a little and serve with whipped cream.
