Ingredients

- 170g Butter
- 170g Caster Sugar
- 255g Self-Raising Flour
- 3 Egg Yolks
- Meringue

- 3 Egg Whites
- 170g Caster Sugar
- 2-3 Cooking Apples
Method
- STEP 1Preheat the oven to 180C/fan 160/gas 4.
- STEP 2Grease the base of a 28cm, 3.5cm deep Flan tin.
- STEP 3Melt the butter with the caster sugar in a Medium sized pot.
- STEP 4Add the flour and the egg yolks, mix well with a wooden spoon.
- STEP 5Spread the mixture in to the tin.
- STEP 6Beat the egg white with an electric beater until stiff, add the caster sugar and beat again briefly.
- STEP 7Peel the apples and grate them. Spread them over the base mixture.
- STEP 8Cover the apples with the meringue.
- STEP 9Put in the preheated oven for approx 45 minutes, turning the oven down after 20 mins if getting too brown.
- STEP 10Cool a little and serve with whipped cream.
