This chilli recipe can also be used as a lasange filling by ommiting the chilli and beans and adding chopped basil. A healthy filling meal with five vegatables.

Ingredients

  • 2x garlic cloves
  • 1x medium chilli
  • 1x large onion
  • 1-2 tbsp olive oil
  • 1x beef oxo cube
  • 1lb/ 450g lean steak mince
  • 3x large carrots
  • 1x courgette
  • 2x red/yellow peppers
  • 200g closed cap mushrooms
  • 1x tinned chopped tomato
  • 1-2 tbsp tomato puree
  • 1x tin chilli/kidney beans
  • half can water (use tinned tomato can)

Method

    1. prepare the vegatables, finely chop onion, garlic and chilli. cube the rest of the vegetables. Heat oil in large pan, add chilli, onion and garlic soften for approx 5mins
    2. add carrots to pan, cook for further 5-10mins till soft. add mince and oxo cube, cook till mince is brown
    3. add courgette, peppers and mushrooms, cook for 5-10mins
    4. add tinned tomatoes, puree and half can of water stir on medium heat for 5 mins, reduce heat and leave to reduce for 40mins-1hr or untill mix has reduced and tickened. stir occasionally
    5. add chilli beans, cook for a further 5 mins then serve with crusty brown bread, boiled rice or tortilla chips and soured cream. Enjoy!

I've just made this, with some adjustments (no beans, no onions, green pepper instead of red/yellow and only for one person). This is a pretty good recipe, I like it.
