  • 8 reduced-fat sausages
  • 1 yellow pepper, deseeded and chopped
  • 4 red onions, cut into wedges
  • 400g can chopped tomatoes
  • 250ml vegetable stock
  • 1 tbsp x 20g pack basil (use the rest in the toasts)

  1. Heat oven to 220C/fan 200C/gas 7. Put the sausages, pepper and onion into a roasting tin, then roast for 20 mins.

  2. Lower oven to 200C/fan 180C/gas 6, then tip tomatoes and stock over the sausages. Add sugar and most of the basil, season, then stir well. Roast for another 20 mins. Serve with garlic toasts, recipe below, sprinkled with the remaining basil.

I had a packet of chipolatas which I used and added a tin of canellini beans so that they bulked out the meal (which worked well). Having seen the comments abut too liquid a sauce, I rinsed the tomato tin out with a little water and that was fine. This was a very easy meal to prepare! I had a baguette so I cut this into rounds (4 for each person) and spread the buttery/garlicky/cream cheesy mix on these before grilling. The toasts were a great hit. I would add some dried herbs to the casserole next time - basil and/or oregano to strengthen the flavour - and some garlic and a drop of chilli to warm it up. It is a very flexible recipe!

Absolutely loved this. Had a terrible cold but wanted something delicious, hearty and comforting. This was so easy and I simplified it further by buying ready-made garlic bread. I made it with the following tweaks and it was absolutely sensational: - Instead of chopped tomatoes I used a 350ml carton of Italian tomatoes with garlic and olive oil (recommend the extra sauce) - I used an extra pepper as per several peoples' suggestions - Couldn't get fresh basil so used dried, and it turned out fine (could still taste a hint of basil). This was SUCH a tasty supper - just what I needed. Would highly recommend. Unbelievably easy too. Love you BBCGF. x

This was delicious! As others have done, I only added 3 red onions and an additional pepper. I made some little roasties to go on the side which we enjoyed with it. We will try the garlic toasts next time. My 2.5 year old wasn't keen on the roasted veg but I'll whizz it up for a tomato sauce for him next time. This is definitely going to become a regular family meal in our house!

I added an extra pepper, as well as some butter beans and cherry tomatoes towards the end of the cooking time. Overall a really tasty dish and one I will definitely be making again!

Yum! Made this yesterday and everyone loved it. Added an extra green pepper, seeing as they don't taste good on their own. Only problem is that the sausages need about 25 - 30 minutes to cook before adding the tomatoes. We'll finish off the leftovers today; I look forward to it!

Just to add i made too much of the garlic toasts so kept these and made into breadcrumbs the next day for yummy garlic breaded chicken fillets

Made this tonight, very simple and tasty - next time I would use less stock as I prefer a thicker sauce, using the 250ml stock made it pretty thin.

Super Duper recipe! Minimal fuss after work and super scrummy! I used turkey sausages and put a teaspoon of brown sugar in as the ingredients list didn't match up with the recipe and found that was maybe a touch too sweet but still nice! Clean plates for both me and the hubby, will be making again :)
