Method

  1. Heat oven to 200C/fan 180C/ gas 6. Put the vegetables into a large roasting tin. Scatter with the thyme and season. Drizzle with 2 tbsp olive oil and roast for 40 mins, turning halfway.

  2. Meanwhile, soak 8 wooden skewers. Put the chicken into a shallow dish, then mix with the lemon juice and pesto.

  3. Thread the chicken and tomatoes onto the skewers, then put onto a roasting tray. Drizzle with the rest of the olive oil and roast for 20 mins, turning once, until the chicken is cooked through. Boil the pasta. Toss half of the roasted vegetables and pasta together, then serve with the pesto chicken kebabs.

I've decided to post a comment as I love this recipe so much and everyone else does who I make it for.. I read the comments (as always) to get ideas.. I marinate the chicken chunks in lemon, garlic and pesto, for as long as possible, I do not bother with skewers then cook red peppers and add them to the chicken in pesto, mushrooms and tomatoes.. once pasta is cooked add to the chicken and serve.. always loads left over for lunch the next day! Fab recipe

Made this recipe with home made pesto instead and with 200g couscous instead of pasta and seasoned the vegetables with dried thyme and dried mixed herbs it was delicious! However I only used one pepper, one courgette and half the butternut squash and it made enough to feed about 6, delicious next day though!

I have made this a couple of times now (just the chicken if I'm honest) and w creally like it as a family. My 5 year old loves the chicken, it is tasty and moist and of course, it's on a stick so she loves eating it! Plus it is so easy to make. Perfect. It will be a regular feature in our dinner routines.

Tasted fab and the kids loved it! I did the chicken on skewers, simply because I find food on a stick is much more appealing to 3 and 5 year old than normal food!

I made this tonight, very tasty, didn't use skewers, as took advice from above and loved it, also added garlic and mushrooms instead of butternut squash as don't like it. Will deffo make again :)

Made this last night - I marinated the chicken with Pesto and some red chillies for extra spice. I also cooked the chicken with the veg and stirred all this into the cooked pasta. Delicious - and plenty leftover for lunch the next day!
