Ingredients

  • 20-24 sponge fingers
  • 2tbsp cold black coffee
  • 2tbsp coffee essence
  • 2tbsp amaretto
  • 4 egg yolks
  • 90g caster sugar
  • 3 drops vanilla essence
  • grated rind of half a lemon
  • 350g mascarpone cheese
  • 2tsp lemon juice
  • 250ml double cream
  • 1tbsp milk
  • 30g lightly toasted almonds
  • 2tbsp cocoa powder
  • 1tbsp icing sugar

Method

  • STEP 1
    arrange half of the sponge fingers in the base of a serving dish.Combine the coffee,coffee essence and amaretto and pour half the mixture over the sponge fingers.
  • STEP 2
    put the egg yolks,sugar,vanilla essence and lemon rind in a heat proof bowl and stand over a pan of gently simmering water and whisk until thick and creamy.
  • STEP 3
    put the marscapone and the lemon juice in a bowl and beat until smooth.Then combine the egg and the cheese mixtures, when evenly blended pour half over the fingers and spread out evenly.
  • STEP 4
    add another layer of fingers,sprinkle with the remaning coffee and top with the rest of the cheese and egg mixture and leave to chill for 2 hours.
  • STEP 5
    to serve,whip the cream and milk togeher until stiff then spread it over the dessert.Sprinkle with the almonds.Finnaly dust with an even layer of cocoa powerder.
  • STEP 6
    Then lightly dust with icing sugar.
