Method

  1. Heat the grill. Boil the pasta according to pack instructions, then tip into a colander and cool under gently running water. Meanwhile, grill the bacon on a baking tray until golden and crisp at the edges. When almost ready, tip the walnuts onto the tray to toast a little. Snip the bacon into strips.

  2. Mix the lemon zest and juice, Parmesan and oil in a large bowl. Season with pepper, then tip in the spinach, tortellini, bacon and walnuts. Toss well, add the ricotta in small blobs, then gently toss. Season to taste, then serve with a drizzle more oil and more Parmesan, if you like.

Unfortunately this recipe didn't go down too well with me, the lemon combined with the cheese wasn't a great combination in my opinion. However I did absolutely love everything else, so think I'll combine it with a cheese or white sauce next time.

Loved this! I used pancetta instead of bacon but otherwise the recipe was the same. Agree with other people though that this is definitely not enough food for 4 people, it serves 2 fine. I am also pretty sure that the calories are a bit higher than this, especially when you consider most people are eating twice as much as this recipe is counting on. But even so, the Tortillini I found was 588 calories for 150g.

just made this and followed the recipe exactly. I agree with the other comments re: portion size...it made a good size supper for 2 adults in our house but cannot see it serving 4 as a main course. It was absolutely delicious and I will definitely be making it again.

Very quick and tasty dish. We used the zest of a whole lemon and agree with previous comments about it being a good portion for 2 people rather than 4. Will definitely be making this again.

Delicious! I didn't have parm or ricotta cheese on hand, but found that throwing a few chunks of fresh mozzarella was perfect for balancing the acidity in the dressing. Light and lovely dish, partner loved it, can't wait to make again.

Delicious! I changed the timings a little so that I could keep the pasta hot for serving and it was great, a very light taste. I agree with Beth, this was a decent portion for 2 people with salad, but I really don't think this would stretch to 4 unless it was a light starter.
