  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.

  2. Tip into food processor with the coriander then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

Fresh and healthy soup. Excellent texture. I would recommend serving with fresh corriander and a dash of cream... Well worth the effort

Just the trick for a rainy Saturday afternoon. My son ate his in about 2 minutes flat and asked for seconds so it must have been good! A great way to get vitamins into growing chiddlers.

This was a very, very nice soup. But it felt like something was missing to take it to the next level, maybe a bit of spice. Will have a play around with a few things next time.

Quick, easy to make and delicious! I used a dollop of natural yoghurt when serving, with fresh coriander and it really lifted it.

Best carrot and coriander recipe... only make it with carrots off the allotment though as shop brought ones just dont't have that flavour.
