  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.

  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

I love this soup! Really easy to make. I added three potatoes and only 1 litre of stock because I like my soups thick.

Yum, made this soup today. The soup wasn't as thick as I normally have, but it didn't detract from the lovely flavour, and actually made it quite a light soup. Next time I may add more potato. Don't hesitate to try it, its lovely.

Hi Made for the second time this time with ground corriander only - i prefered it 1st time round with the fresh - however i have read that it is nice with cumin seeds so i will try that aswell :)

lovely, tried this recipe several times, once without the ground coriander but I think it really needs it for depth of flavour.

Very easy to make and tasted really nice, my 12 year old son loved it. A great recipe for a healthy lunch at work.
